Hans van Wolde, as your guide, will take you on an unforgettable journey through Bergen. He will let you enjoy the local cuisine, where fresh seafood and traditional dishes take center stage. Day 1 - Arrival

Sunday, March 22

We depart from Schiphol Airport to Bergen in Norway. Since everyone arrives at Schiphol in different ways, we have chosen to meet at the gate. This allows everyone to manage their time as they wish.

Transfer to hotel

Upon arrival, we will be picked up by a private transfer to our hotel, Opus XVI. After checking in, we will have plenty of time to acclimatize.

Check-in at Hotel OPUS XVI

Opus XVI, an Edvard Grieg Heritage Hotel, is housed in a historic building dating back to 1876. This luxury hotel is located in the center of Bergen and features uniquely decorated rooms and suites. Guests can enjoy a Norwegian breakfast buffet and admire the exhibition in the accommodation. Broadband WiFi is available free of charge in all areas. All rooms have a seating area, a flat-screen TV and a tablet for personal use. The private bathrooms have underfloor heating and a walk-in rain shower. A minibar with drinks and snacks, a safe and a spacious wardrobe are also provided. Guests can enjoy lunch or dinner in the on-site restaurant. Afternoon tea is served on Saturdays. The restaurant offers many local fish dishes, as well as vegetarian and vegan options. In the spacious lobby you will also find a bar and an art exhibition by local artists. From June to August, you can enjoy lunch concerts at the hotel for a surcharge. Restaurants, bars, shops, the fish market and Bryggen are all within a few minutes’ walk. Bergen Central Station is 700 meters away. A parking service is available.

To the funicular

At 7:15 PM, we walk towards the Floibanen, Norway’s only funicular, for dinner at the Floirestauranten. This 100-year-old restaurant overlooks Bergen and the bay and guarantees a spectacular opening to this trip. After dinner, we return to the hotel via the Funicular.

Welcome dinner Fløirestauranten

The hundred-year-old restaurant on the top of Fløyen has been completely renovated! Fløirestauranten is the place where memories are made and shared. The brasserie has an informal, cozy atmosphere with delicious local dishes. In Peisestuen you can enjoy a delicious cocktail. Celebrate the many events of life in ToppFløyen. Put on your best clothes and discover a 10-course sensory menu at Schou. Or enjoy the terrace with its great views and a refreshing drink or snack.

Day 2 - Fishing & Hans

Monday, March 23

On the 1st day of our Norwegian ‘Expedition, we’re off to a good start. We will be picked up to go fishing in the Fjords. The area here is not only known for salmon, but also for crab fishing. With our daily catch, our chef Hans, with Daan in tow, will prepare a delicious lunch for you.

We are going on a guided fishing trip west of Sotra. Our local guide will take you to the best fishing spots near the North Sea. Enjoy the fresh air while fishing for lobster, crab, cod or salmon. At the end of the afternoon, Hans** will prepare a delicious lunch from the catch.

Scalmarin

After lunch, we will take a private transfer to Scalmarin. Scalmarin has been supplying top quality fish, shellfish and crustaceans for years. They are characterized by fresh local products where sustainability is of paramount importance. After this visit, we will return to the hotel and have time to freshen up for dinner.

Departure to harbor

At 7:30 PM, we walk to the harbor where we take a boat to Cornelius restaurant for dinner. Cornelius restaurant is known for its seafood and is located on the water. After a beautiful evening, we will calmly return to the hotel to prepare for the day ahead.

Day 3 - Coquilles Diving

Tuesday, March 24

Anyone who thought this would be a lazy trip is wrong. Today we are going diving for fresh Coquilles. In the cold, clear water we will search for these fantastic shellfish in special diving suits. The catch is prepared ashore by Hans and served as a delicious lunch.

We are guests at Nemo Diving Bergen. Here we will dive for scallops. The bay of Bergen is one of the most nutritious grounds for the growth of wild scallops. A unique experience you will never forget.

Lunch in the hotel

After returning to the harbor, we go straight back to the hotel. While you enjoy a hot shower or bath, Hans** rushes into the kitchen to prepare a lunch that is hard to beat in terms of freshness.

You have the opportunity to explore Bergen in peace and quiet, whether in an organized setting or simply to enjoy a well-deserved siesta!

Walking to restaurant

At 6:45 PM, we walk to Lysverket restaurant. This Michelin-starred restaurant is run by chef Christopher Haatuft. Around half past ten we walk back to the hotel.

Dinner restaurant Lysverket *

This stylish restaurant, located in the KODE 4 art museum, overlooks Lake Lille LungegĂĄrdsvannet. Chef-owner Christopher Haatuft, who is larger than life, passionately oversees the entire operation, serves dishes and maintains the connection with guests. The 10-course tasting menu is based on fantastic Norwegian products, including always scallops that Christopher’s good friend has caught nearby. The dishes have a fresh look and allow the main ingredient to come into its own.

Day 4 - Fjord tour and Iris

Wednesday, March 25

On this last day in Bergen, we take you to the Iris restaurant. A long-cherished wish of Hans is thus fulfilled. We take our own boat through the Fjords to the restaurant where we are met by Anika Madsen’s brigade.

So much has already been said and written about this restaurant and the reviewers run out of superlatives. After this great experience, we will return to Bergen in groups of 4 by ….. helicopter. This flight goes over the water along the Fjords and contributes to the fact that we will never forget Bergen.
